Menus at Allouez Parkside VillageNutrition Nook – May, 2011 The month of May finds us with a variety of celebrations. We have Cinco de Mayo; Mother’s Day and Memorial Day. With these three celebrations in mind, I have a fabulous recipe below that will go well with chicken enchiladas; brunch for mom or a fry-out on Memorial Day. Plus, there is an added Health Benefit. The Health Benefit is the cantaloupe. This melon contains pyridoxine, a B vitamin that reduces spinning sensations by regulating nerve activity in the brain. Thus, cantaloupe with fend off dizzy spells. TROPICAL FRUIT TOSS (makes 4 servings) ½ large pineapple, peeled, cored and cut into 1” chunks ½ large cantaloupe, scooped into balls 2 kiwifruit, peeled and sliced ½ cup halved maraschino cherries ¼ cup sour cream 1 Tbs. honey ¼ cup shredded coconut, toasted In large bowl, combine pineapple, cantaloupe, kiwifruit and cherries. Divide fruit mixture evenly among 4 glasses or 4 halved cantaloupe rinds, if desired. In separate bowl, combine sour cream and honey; top fruit with mixture. Sprinkle with coconut.
